Today the boys decided what we would have for dinner. They went with breakfast for dinner easy enough sounded good to me : ) I decided to try out a different pancake. We tend to have just regular buttermilk pancakes but I figured we could try out something different and a little healthier. These were pretty good and very filling since there made with oatmeal instead of flour. My older boys ate all that I put on there plates so they must have thought they were ok.
Banana Oat Pancakes
- 2 cups rolled oats
- 1 1/4 cups milk (what ever kind you like)
- 1 ripe banana
- 1/2 tsp cinnamon
- 1 tbls maple syrup
- 1/2 tsp sea salt
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1 egg
1. Place all ingredients except egg in a blender and blend until smooth. Add egg and blend a few seconds more.
2. Let batter stand 10 minutes or longer to thicken.
3. If batter becomes to thick to pour easily add some milk.
4. Heat pan or skillet and grease with butter.
5. Pour batter into pan and cook for 2-3 on each side.
