What's for Dinner Wednesday!

Wow have we had some beautiful weather yesterday and today! Its been in the 80's and sunny. Any who its Wednesday again so its time to share with you what we had for dinner tonight:) My 2 older boys LOVE tacos (especially my middle one he's got a taco addiction lol) so this is something I make often. Its easy and delicious:) this amount makes enough for 2 adults and 2 kids with a little bit left over (there were 9-10 tostadas made between all of us) so you can kinda get an idea how much this makes in case you need to adjust the amount for your family.

Chicken Tostadas

  • 4 chicken breasts
  • 3 tomatoes (you could also use tomato sauce if you prefer)
  • 1 onion
  • 1 jalapeno pepper
  • Oil (I use canola)
*For toppings we like sour cream, shredded cheese, avocado, pinco degio, salsa*

1. Boil your chicken until completely cooked.

2. When chicken is done boiling put it on a plate to cool. Once its cooled down you'll shred it all up.

3. Roughly cut up the tomatoes, pepper and onion and place them into a blender. Add a small amount of oil (you only need a little) and blend everything up it will end up being like a thickish liquid. ( I take out the seeds from the jalapeno because of the kids but you don't have to if you want it a little spicier)

4. Put the shredded chicken and the blended up sauce into a skillet and mix thoroughly.

5. Heat it up on low heat for about 10 min. Make sure to stir every once in awhile so it doesn't stick.

I usually make some homemade mexican rice (my boys grandmas recipe she's from mexico and makes the best rice ever!!) But tonight I just used a boxed yellow rice. Grab your tostada and put your favorite toppings and enjoy! Just a side note I usually just boil and shred the chicken earlier in the day that way when dinner time comes its ready to go.

  1. Yum! Do you have to start dinner early, so you can take photos and have a blog break? :)

  2. Hi pam this is only my 3rd what's for dinner wednesday but so far I've just done dinner like normal and try to remember to snap pics (there not the greatest and I didn't take on of every step but I try my best) then later when I'm nursing my little guy I'll write up my post and try to have it up before the days over:)

  3. Sounds scrumptious will have to give this a try......

  4. Sounds delicious; I'll be right over ;o)

  5. MMM this sounds so good! I'm on a diet so I am like dreaming of all the food I want to eat lol. Thanks for your comment on my blog. You really made my day.
