What's For Dinner Wednesday!

I've been slacking on 'What's for dinner Wednesday' posts. But I'm gonna try and get back into it. So tonight I need something quick and easy. We have a lot of errands to run and stuff I have to get ready for tomorrow. So I decided on cheesy roast beef sandwiches and watermelon.

Cheesy Roast Beef Sandwiches
  •  1 1/2 pounds of roast beef (I find that's just enough for 6 sandwiches)
  •  French rolls or what ever kinda rolls you like
  •  Shredded mozzarella
  •  Butter
  •  Garlic powder or fresh finely chopped garlic
  •  Au Jus sauce
1. Preheat your oven to 350°.

2. Take the packet of au jus sauce and whisk it in 7-8 cups of water. Add in the roast beef one slice at a time. Heat over medium heat till thoroughly heated.

3. While the beef is heating up take about 3 tbls of butter and some garlic powder and melt it in the microwave.

4. Line a baking sheet with foil. Butter one side of each roll.

5. Take the roast beef and evenly divide it among the rolls. Sprinkle with mozzarella.

6. Bake it at 350° for 5 - 10 minutes till mozzarella is nice and melted. Use the juice for dipping if you like.

Enjoy! It's super quick and easy but it's really yummy : )

  3. roast beef sandwich sounds absolutely delicious. and I am and have been craving water melon for a week or more and girl you just made it worse. watermelon with salt on it is beyond the best. If I can get me some watermelon and then we'll get fresh peas and butter beans and already have corn on the corn in the freezer. well once i get all that it's official summer and summer can end b/c that's how my summers will and need to be.
