Strawberry Poke Cake!

We had a cookout with family and for dessert I made a strawberry poke cake and a tray of fresh fruit. Perfect for a HOT summer day. If you've never had one or made one your missing out! They are really light and moist and super easy to make. The boys even helped and I think they did a great job : )

Strawberry Poke Cake
  •  1 box of cake mix & what ever ingredients need to make the cake
  •  1 pkg of strawberry jello
  •  Cool whip
Bake the cake according to the directions on the box. Let the cake cool down a little. Poke holes in the top of the cake. Boil 1 cup of water and add the jello and add 1 cup of cold water mix and pour over the the cake. Refrigerate for 3 hrs and then frost with cool whip.

That's it really easy and oh so yummy! Do you have a favorite dessert you like to take to cookouts?

  2. Strawberry poke cake is my absolute favorite summertime dessert! It is so refreshing and I love that the "frosting" is Cool Whip. I could live off Cool Whip. :)

  6. That looks so delicious!! I think this might be the perfect summer treat for my boys to help me make! Does the jello change the texture or consistency at all?

    1. Thanks Carmen! I'm sure they would like it. Mine liked cracking the eggs, poking the holes in the cake and pour the jello : ). The jello doesn't turn into regular jello consistency but it makes the cake moister were the jello is. Kinda like tres leches cake but not quit as moist hope that helps.

  8. I've never had that, but it sounds good! I make a " butterfinger" cake that is similar and so delicious. You make a regular boxed cake. Baked & poke holes in it with the handle of a wooden spoon (or similar. Then pour condensed milk & caramel in the holes while ale is still hot. Let cool. Frost with cool whip. Top with 1 crushed butterfinger candy bar. So so so so so good!!!

  9. This was a favorite cake for me growing up. My mother would make it for my birthday every year. She used orange cake mix and lime jello and the frosting was made from vanilla pudding mix and dream whip. Good time!
