Healthier Peanut Butter Cookies
- 1 cup of peanut butter (any kind you like regular, natural, homemade)
- 1/2 cup of sugar
- 1 egg
- 1 tsp vanilla
- 1/2 tsp baking powder
*This makes about 14 cookies*
Preheat oven to 350°. In medium bowl combined all ingredients and mix together. Take a spoonful of dough and roll into a ball. Place on a ungreased baking sheet. Take a fork and flatten making a crosshatch pattern across the top. Bake around 10 minutes. Let the cookies rest for 5 minutes before removing from the baking sheet.
Enjoy they really are pretty dang good! If you try them out let me know what you think : )

Thanks Stacey : ) The edge has a little crunch to it and the center is softer. If you cook it a little longer then the entire cookie gets crunchy. Hope that helps : )
